Spring means fresh from the garden asparagus. As you steam, roast or sauté the spears consider the history of this nutritious vegetable.

People have been eating and enjoying this vegetable for centuries. Scientists found an image of a bunch of asparagus on an Egyptian tomb from 3000 BC.

Records showed it was a prized vegetable in ancient Rome and during the Middle Ages. People used to believe it had aphrodisiac properties, improved eyesight and lessened the pain of toothaches.

Asparagus is nature’s own detoxifier. It also helps fight cancer, reduces pain and inflammation, prevents osteoarthritis, and fights aging. 

Consider adding some to the edge of your vegetable garden or back of a mixed border or flowerbed. This perennial vegetable will provide decades of flavorful harvests once established.

A bit more information:  Low in calories, asparagus provides significant amounts of vitamin A and C as well as folate and fiber. Ninety percent of the asparagus that is shipped fresh throughout the United States is grown in California, New Jersey, Washington and Massachusetts.
