Celebrate National Sweet Potato Month by finding new and different ways to include them in your menu.

Sweet potatoes are tasty and nutritious. And when children and even adults help grow and prepare these and other vegetables they’re more likely to eat them.

Get everyone involved in a recipe search for new and different ways to prepare and enjoy sweet potatoes.

Include them at breakfast by substituting them for potatoes in hash or combining them with kale and poached eggs for a super nutritious start to the day. Or cut them in half, scoop out a bit of flesh and fill with a bit of butter and a raw egg then bake.

Cook in soups, stews and chili. Or create healthy snacks such as sweet potato crackers, hummus and chips.

Don’t forget to include younger members of the family. Have them help by washing and scrubbing the sweet potatoes before cooking.

A bit more information: Sweet potatoes contain vitamin A and beta carotene that promote eye and skin health and help protect us against infections. They also provide vitamin C, fiber, and potassium. So, enjoy the flavor and health benefits!
