Harvesting and Storing Peaches

Extend your enjoyment of fresh peaches with proper harvesting and storage.

Pick peaches when fully colored, sweet, and juicy and consume as soon as possible for the best flavor.  Store the extras in a plastic bag in the refrigerator for 3 to 5 days. If the skins begin to wrinkle, it is time to eat them or bake a delicious peach treat.

Under ripe peaches can be stored at room temperature and allowed to ripen naturally in several days. Speed up the process by placing the peaches in a loosely closed paper bag and check daily. Do not place unripe peaches in the fridge as their quality and flavor deteriorates when ripened in cooler temperatures.

Or freeze them for later use. Slice your peaches, place on a cookie sheet and freeze. Once firmly frozen, store in a plastic bag in the freezer.

A bit more information: You can dry peaches, and if properly stored, they will last up to 12 months. Twelve pounds of fresh peaches yields about 1 to 1 ½ pounds of dried fruit.
