Garden Fresh Recipe: Ratatouille
When harvest season arrives, cooking becomes less of a chore for me and the results taste much better!
Ratatouille is one dish I plan my garden around and love to serve family and friends. All you need is one medium eggplant cubed, 3 medium zucchini (sliced), 2 medium onions sliced, 1 medium pepper, sweet that is, diced and 2 cloves of garlic minced. Sautee these in 3 Tablespoons of olive oil. Add 8 or more tomatoes, ½ cup fresh parsley chopped, 1 T fresh basil. Cook over medium heat until most of the liquid evaporates. Place in a 9 by 13” pan, sprinkle with ½ cup grated Parmesan cheese, cover with foil and bake at 450 degrees for 30 minutes or until thoroughly heated.
Serve as a side or on rice as the main entrée.
A bit more information: Plan on growing more of your favorite ingredients next season. Having some frequently used herbs and vegetables growing right outside your kitchen door makes it easier to prepare a tasty and nutritious meal for all to enjoy.
