2018 Year of the Beet

Celebrate the 2018 Year of the Beet by planting several varieties in your garden and including them in your meals.

These flavorful vegetables contain fiber, vitamins A and C, calcium, potassium, phosphorous, and more iron than most vegetables.  Betalain, the antioxidant in beets, can be used as a natural red dye and food coloring. In fact, it inspired the saying “red as a beet” and was used to provide that color in makeup.

Beets tolerate warm temperatures but germinate best during cooler weather. Plant seeds ¼- ½ inch deep and 1 to 2 inches apart every 3 to 4 weeks for a continuous harvest. 

Beet seeds are actually a cluster of seeds. You will need to thin the multiple seedlings into one individual sprout.  Cook these greens or use them fresh in salads.

A bit more information: Some companies are now separating these clusters into individual seeds. Find new ways to use your beet harvest. Cook, roast or pickle the roots. And use the juice for borsch.
